A simple summer supper: BLTs, corn on the cob, curried hard-boiled eggs, red potatoes and peas and the first of our dill pickles. Mint tea to drink in my lovely Smurf glass. (No, I didn't grow up watching the Smurfs, but that's why I always loved to drink out of the Smurf glass at my grandparents house. My sweet Aunt Nicki gave me a whole set of Smurf glasses this year!) This was the perfect easy supper for a busy sewing day- I finished a dress for myself and sun hat for Alex yesterday, and had time to whip up this dinner before Nick got home.
Alex wanted to sit on Nick's lap so that he could reach Nick's corn on the cob after he finished his. Corn on the cob is one of Alex's favorite foods, and my boys love Nueske's bacon, so this was the perfect dinner!
That is, indeed, the perfect meal. How do you make your curried eggs?

This is my potato & egg curry recipe:
-Hard boil 6 eggs. Cook 8 new potatoes. Saute 1 onion in olive oil & sea salt, add 1/2 tsp tumeric powder, 1/4 tsp. chili powder & 1 tsp. curry powder. Add chopped eggs and sliced potatoes and 2 grated carrots, toss together. I also added peas from our garden, and sometimes green beans, too.
